Vegetarian Chocolate and Marmite Chilli

This is one for the meat lovers.

I dubious before making it as I’ve had Chilli made with just veg and beans before and found although they were nice they did make a substitute for my favorite comfort food Chilli Con Carne. This recipe however will blow the socks off any beef Chilli and convert even the hardest carnivorous.

A pinnable imagine of a vegetarian chilli con carne on rice, topped with salsa and creme fraiche.

Ingredients

2 tins of chopped tomatoes.

1 tin of kidney beans

Cooking oil

1 large onion

3 cloves of garlic

3 stalks of celery

2 large carrots

1 large red pepper

1 punnet of mushrooms

2 chill’s (more or less, or none at all depending on your palate.)

2 teaspoons of tomato puree

2 teaspoons of paprika

1 teaspoon of ground cumin

1 teaspoon of ground coriander

1/2 teaspoon of marmite

4 squares of dark chocolate

Optional Salsa on top.

Ingredients.

Fresh tomatoes

Fresh coriander

1 red onion

1 avocado

1 chili

1 lime

Add Creme Fraiche on top optional.

Method

Finely chop onion add to a large saucepan with oil to soften on a low heat. Once the onions are softening and slight browning add garlic.

Chop the rest of your veg (celery, peppers, carrots, mushrooms.) Make sure the veg is chopped into as smaller chunks as possible, Use a food processor ideally or like us a veg chopper. This helps give the right consistency to the Chilli at the end.

Add all the veg to the onions and garlic, keep on a low heat and pop the lid of for everything to soften. After a minute of so add the cumin, coriander, paprika and tomato puree. Stir and replace the lid. Do this every minute of so to avoid it sticking. Let it cook down for 10 minutes until everything is soft.

Add tinned tomatoes. 1 can or 2 depending on how saucy you like it. Add kidney beans and marmite. Stir in and leave to slimmer for as long as possible. At least 20 minutes. The longer the better.

When ready add the chocolate, salt and pepper to taste and Voila. The meatiest veggie chilli you’ll ever make.

Serve over rice, add salsa and creme fraiche on top and enjoy.

Salsa Recipe.

Finely chop fresh tomatoes, avocado, red onion, fresh coriander, and one chilli (depending on your taste). Squeeze in one lime and add salt to taste. Add to Chilli for a fresh crunchy topping.
